What is Cordyceps Flower (蟲草花)?

Cordyceps Flower, also known as Cordyceps militaris, is a cultivated fungus sometimes referred to as “Northern Cordyceps.” Unlike wild cordyceps, it is not parasitic on insects but grown under controlled conditions using grains or beans as the culture base. The fungus has a slender, flexible shape and a bright golden-orange colour with a light, pleasant aroma. It is commonly sold in dried form for easier storage and cooking.

Characteristics
Cordyceps Flower has a delicate fragrance and a smooth texture when cooked. Once rehydrated, the dried fungus releases a natural aroma that enriches the flavour of soups. Its vibrant golden colour and clear soup tone make it a popular ingredient for enhancing the appearance and taste of dishes.

Cooking and Pairing Suggestions

  • Soups / Stews: Often simmered with Polygonatum Root, Agaricus Blazei Mushroom, Astragalus Root, or Red Dates to create aromatic and flavourful soups.
  • Steamed or Braised Dishes: Pairs well with chicken, pork ribs, or tofu, adding subtle aroma and tender texture.
  • Stir-fry / Rice & Noodle Dishes: Can be added to fried rice or noodles for extra golden colour and aroma.

Interesting to Know
Despite its name, Cordyceps Flower is not a real flower but the fruiting body of a fungus. With its stable cultivation, affordable price, and distinctive taste, it has become one of the most popular and versatile mushroom ingredients in Hong Kong–style home soups and nourishing recipes.

What is Polygonatum Odoratum (Yu Zhu 玉竹)?

Polygonatum odoratum (Polygonatum Root / Yu Zhu) is the dried rhizome of a perennial plant in the lily family. Its fleshy rhizome is harvested, sliced, and dried for use as a traditional food ingredient in soups and herbal cuisine. According to botanical references, it is also known as “Fragrant Solomon’s Seal Rhizome.” Dried Polygonatum roots are yellowish-white or light brown, semi-translucent, and slightly flexible in texture.

Characteristics
According to records in Traditional Chinese Medicine (TCM), Polygonatum Root (Yu Zhu) is sweet in taste and neutral in nature. It has been traditionally used for centuries to nourish yin, moisten the lungs, and support the stomach’s natural hydration.*
The root has a mild, naturally sweet taste and a delicate herbal aroma, making it a common ingredient in Hong Kong–style soups and nourishing recipes.

Cooking and Pairing Suggestions

  • Soup / Stew: Often simmered with lily bulb, glehnia root, snow pear, and apricot kernels to enhance flavour and add gentle sweetness.
  • Tea / Infusion: Can be steeped as a light herbal tea, often paired with goji berries and red dates.
  • Congee / Nourishing Soup Porridge: Add slices of Polygonatum Root to porridge or soup for a smoother texture and subtle aroma.

Interesting to Know
The Chinese name “玉竹” literally means “jade bamboo,” referring to its bamboo-like nodes and translucent, jade-coloured rhizome texture.

What is Chinese Yam (淮山)?

Chinese yam, also known as Dioscorea polystachya or Huai Shan, is the tuber of a plant in the yam family. Fresh yam has a crisp texture and natural mucilage, while dried yam is made by slicing and then sun-drying or oven-drying the tuber for long-term storage and convenient cooking. Dried Chinese yam slices are pale yellow or ivory white, with a smooth or slightly wrinkled surface. They are one of the most common ingredients in Hong Kong–style soups and home-cooked herbal stews.

Characteristics
Chinese yam has a mild, naturally sweet flavour and a soft, powdery texture when cooked. The dried form becomes smooth and fragrant after simmering, adding a gentle sweetness and balance to soups. Because of its creamy texture and subtle aroma, it is often regarded as a nourishing and versatile ingredient suitable for all seasons.

Cooking and Pairing Suggestions

  • Soups / Stews: Commonly simmered with lotus seeds, red dates, polygonatum root, or codonopsis root for a soothing, slightly sweet soup.
  • Congee / Nourishing Meals: Often cooked with rice, barley, or pumpkin to make a creamy and wholesome porridge.
  • Steamed / Pan-fried Dishes: Fresh yam can be steamed or lightly pan-fried as a refreshing and nutritious side dish.

Interesting to Know
When handling fresh Chinese yam, some people may experience itching or tingling on the skin. This is caused by calcium oxalate crystals found in its skin and mucilage. Wearing gloves or soaking the yam briefly in salt water before cutting can help reduce irritation. Dried Chinese yam, on the other hand, has had the mucilage layer removed and does not cause this reaction.
